We recently had a pot luck dinner at work, and one of my coworkers requested I bring green beans and new potatoes in addition my usual pea salad. Everyone loved them. There was only a tiny bit left, and one of the guys snagged that, so I brought home an empty pot.
My recipe is so simple that I thought I would share it with you. This is a dish that is great for holidays or a plain old weeknight. You can make it in smaller or larger batches. One of the wonderful things about green beans is that there are so many ways to cook them.
Margarite’s Green Beans and New Potatoes
Ingredients 6 slices of bacon, chopped in half inch pieces 3 pounds fresh green beans, rinsed, stemmed, and snapped or 6 cans (16oz) green beans 2 pounds new (red) or Yukon gold potatoes, rinsed and quartered 1 medium onion, chopped 1/2 stick butter or margarine 1 clove garlic, minced 1 teaspoon salt 1 teaspoon pepper
Directions Fry bacon in a large pot on medium heat until brown, but not crispy. Add onion and cook another 5 minutes. Drain. Add green beans and potatoes. Add enough water to cover everything. Then stir in remaining ingredients and bring to a boil. Cover and cook on medium heat for an hour stirring occasionally.
