This weekend is going to be a great one for football. The guys who work in my building have been talking about little else. Whether you’re cheering for the Chiefs or the Patriots, nothing goes with football better than great snacks.
If you’re like me, you want to avoid the grocery store right before the game. I hate crowds, so I’ll be buying my game day snacks tomorrow. There are many delicious choices for your football watching munchies. Spicy pretzels, mixed nuts, chicken wings, and sliders are all wonderful choices. However, for me there is one must-have. In my opinion, nothing beats cheese dip.
My cheese dip is extremely easy to make, and I’ve never been disappointed with the flavor. I don’t know how everyone else makes their dip, but I know a ton of recipes use Rotel Tomatoes and Velveeta. Those two things are the main ingredients in my dip. There’s no going wrong when you start with those two starters.
I’m sharing my recipe below. You can customize this recipe according to how many people will be cheering on your team with you.
Margarite’s Game Day Cheese Dip
1 Can Rotel Tomatoes with Green Chilies 1 Brick Velveeta, Cut Up into Cubes 1 Cup Cooked Chicken, Cut into Bite Size Chunks or Shredded 1 Small Red Onion, Finely Chopped 1/2 Cup Sliced Mushrooms
Directions
Sautee onions and mushrooms in a tablespoon of butter. Then toss everything into your slow cooker and cook on low for two hours, stirring every 15 minutes or so.
This dip is fabulous on tortilla chips, crackers, or veggies. I especially love to dip my celery in it. The best part of this dip is that it’s so easily customized. You can use turkey or beef instead of chicken and add the veggies of your choice. I bet black olives would be a great addition, but I’ve never tried it that way. Maybe next time.
Whatever you enjoy on game day, be sure to get to the grocery store early before they’re sold out of Rotel and Velveeta.
